approx 480 gcaster sugar (double the weight of your egg whites)
1 tsp vanilla extract
Start whipping up your egg whites using an electric mixer set to a high speed until they form stiff peaks. This takes about 5 minutes.
Gradually add in the sugar (about a tablespoon at a time) while the mixture is running. Once all the sugar is in the mixture, add the vanilla and whisk for another 5 minutes at a high speed.
Test your mixture to see if it's ready by rubbing some between your fingers. If you can feel some grains of sugar then it's not yet ready.
Line a baking tray with parchment paper and either pipe or spoon your batter onto your baking tray.
Bake your meringues at 300 F (150 C) for 25 minutes or until you can easily lift them off of the tray without them sticking to the paper. Turn your oven off and leave the meringues in there for a minimum of an hour.
